Okay, this is obviously another fav; otherwise it wouldn’t make it to the site. BUT it’s a good one. You wanna know the best part? You literally throw it all in an oven proof skillet and leave it until it’s cooked through. Ugh, yes – no more multi-step cooking on a night where you just want to have a glass of wine and work on something other than dinner (currently re-building our dinning room table).
Ingredients:
- 1 pack of boneless skinless chicken thighs
- 1/4 cup olive oil
- 1 half yellow onion in slices
- Juice of 1 lime
- 2 tbsp sriracha
- Salt+pepper
- Garnish: lime slices, cilantro (don’t skip out on the cilantro, promise!)
Steps:
- Pat chicken dry and season with salt+pepper both sides.
- In a large container with a lid, mix the chicken, onion, lime juice, sriracha, and olive oil. Marinate for at least 1 hour (no more than 4 hours).
- Pre-heat oven to 400 degrees.
- Evenly spread chicken onion mixture into oven-proof skillet.
- Bake for 25 minutes uncovered. For the last 5 minutes, turn on the broiler until golden brown. Cook until an internal temperature of 165 degrees.
- Add thinly sliced lime to top of each chicken and a sprinkle of cilantro and you’re ready to serve!
What we eat as a side: I usually roast some vegetables (okra, zucchini, squash, carrots, etc.) alongside the chicken. Both a pan with veggies tossed in olive oil and seasonings and the skillet should fit in a regular sized oven.
